Güllaç, a sweet Ramadan taste

Ramadan brings different tastes to our tables, after pide there comes güllaç worth waiting for whole year. Güllaç!

Güllaç is a dessert made with rice starch sheets which are layered with walnuts and soaked in a lukewarm milk syrup. Usually rose water is also added to this milky syrup, but for some it is too perfumed. Instead of walnuts; pistachios, almonds, hazelnuts may also be used in between the sheets but I prefer walnuts they have a great harmony.

The taste is so refreshing, so light, so juicy and you just want to eat more. The starch sheets are silky after sucking up all the milk syrup and rose water (if any), walnut crunchy, cold and sweet…
