One great surprise today was the kuzu sarma I came across at Çiya… It was the first of the season, cooked with orzo, it was a true delicacy! And have to admit it was one of the best things I had at Çiya for a long time. Ordered one portion and did not share, no!
I tasted a forkfull… It just needed cumin. I calmly opened my bag, reached out to the newly bought sachet of Konya cumin, teared it up with my teeth and sprinkled some on top of the sarma. Thank goodness, they know me there cause they didn’t act surprised… Or they were polite…
The lamb intestines were melting in my mouth, the orzo sucked all the juices of the sarma, as well as the onions, dill and black pepper all complimenting each other.So tacky to say may be but heaven on one plate! After my first bite with the cumin added, I ordered two portions to take away, glad I did, now thinking I wish I had more…
